Lyon was initially the location of manufacturing cars but now does the manufacturing of chemicals and is a place for higher education. Lyon’s monuments are outstanding and Lyons has the oldest theater in France. The locals come to the old roman square. The cathedral of st jean is a particular gothic facade with massive doors. A basilica is built on the site of the old roman forum. In 1168 two sanctuaries are located in the hills and just survived attacks by the Calvinists. Lyon is a busy crossroads and where better to meet than at one of the many outdoor cafes. The gardens of Lyon are a favourite spot for fishing or walking and even riding your bike. The large botanical garden has many different varieties of rose.

Ecully is a school for top chefs. The government sees the education of top chefs as a promotion of french culture. Many of france’s great chefs are associated with the ecully and lend their expertise to the school of chefs. Students and staff practice in the restaurant in the school. They make unusual dishes such as stingray terrine that is made with spinach and vegetables.

The day to day running of the restaurant is managed by the students. This allows the students to get experience in the hospitality industry and then they can go out and cook fine french cuisine. Gourmet kitchen programs are designed to keep the students up to date. It is essential that cooks choose the best ingredients for their cooking. There are shorter courses for the layman. In Ecully the inspiration for the chef school is Paul Bocuse. His talents are not confined to France but he has restaurants all over the world, even Australia and rio de janeiro. Coq au vin is one of his signature dishes. He takes the time to come into the restaurant and chat with each client personally. The Paul Bocuse Restaurant had opened in Melbourne but closed shortly after. They say that he is planning to open a fast food restaurant. The ecully school of lyons has no shortage of kitchens and they are taught the basics as well as the most fine of gastronomic delights. Creations made from cooked sugar look too good to eat. Students are taught how to work with all the different types of pulled sugar to make the finest candies that are masterpieces of art as well as tasting delicious.
